Limoncello Cupcakes with Spiked Vanilla Frosting
For the Cupcakes:
1 ¾ cup all-purpose flour
¼ cup cornstarch
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon sea salt
1 ½ cup granulated sugar
1 7-ounce container Greek yogurt
⅓ cup Limoncello liquor
1 teaspoon pure vanilla extract
1 teaspoon lemon zest
1 teaspoon orange zest
¼ cup fresh-squeezed juice (from the zested lemon and the zested orange)
¾ cup melted butter
3 XL eggs, beaten
Preheat the oven to 350 degrees. Brush the top of a muffin pan with vegetable oil and line it with paper liners.
In a medium bowl, whisk together the flour, corn starch, baking powder, baking soda, salt, and sugar. In a separate bowl, mix together the yogurt, Limoncello, vanilla, zest, juice, melted butter, and eggs. Make a well in the dry ingredients and add the wet ingredients. Use a wire whisk to mix just until combined. Don’t over mix!
Using a rubber spatula, fold ingredients to make sure all are completely combined. Using a standard ice cream scoop, place batter in each muffin liner. Bake for 20-25 minutes or until a toothpick comes out clean. Allow cupcakes to rest in the pan for 10 minutes then transfer to a wire rack to cool completely.
For the Frosting:
8 ounces mascarpone, at room temperature
8 ounces cream cheese, at room temperature
2 tablespoons limoncello
½ teaspoon vanilla extract
2 cups powdered sugar, sifted
Pinch of sea salt
In a medium bowl, combine the mascarpone, cream cheese, limoncello, vanilla, powdered sugar and salt. Using a handheld mixer, beat on medium speed about 2 minutes. Frost the cooled cupcakes.
Limoncello Aperol Fizz
2 ounces vodka
1-ounce Limoncello 2-ounces Aperol 1 tablespoon fresh lemon juice
Chilled seltzer, such as Pellegrino
Orange slice for garnish
Fill a highball glass with ice. Combine vodka, Limoncello, Aperol, and lemon juice. Stir well. Top with Pellegrino and serve with a slice of orange.
For a Crowd:
Makes 4 Cocktails
1 cup vodka 1⁄4 cup Limoncello 1 cup Aperol 1⁄4 cup fresh lemon juice 1 1⁄2 cups chilled seltzer, such as Pellegrino
Combine vodka, Limoncello, Aperol, and lemon juice in a large pitcher. Fill a 10-ounce glass with ice. Pour vodka mixture about halfway up glass and top with chilled Pellegrino. Garnish with a slice of orange.
